Pecorino Sardo from Sardinia is made exclusively with milk from local sheep breeds. The animals are raised on the inland mountains in an environment rich in herbs and flavors.
Its semi-hard consistency makes it perfect as a match for appetizers or aperitifs, but also suitable for grilling as well as for use in the oven. It is left to age for over 60 days.
The mature type is compact, smooth, naturally brown rind with a full-bodied taste.
