Gorgonzola Strong PDO
This is the famous blue cheese originating from the Lombardy region. It is made with unskimmed pasteurized milk and is prepared by making alternate layers of hot and cold curds. Aged for a minimum of 50 days (Gorgonzola Dolce) which makes it creamy and soft in texture, with a sweet and fruity flavor.
The Gorgonzola piccante (strong) is sharp and aged 70 days, the Gorgonzola by the spoon is aged 90 days
